Water spinach (Ipomoea aquatica), also known as kangkung in Southeast Asia, is a widely grown leafy vegetable recognized for its rapid growth, adaptability to extreme environmental conditions, and nutritional benefits. This paper reviews the characteristics, cultivation methods, and nutritional profile of water spinach, emphasizing its resilience in harsh climates and potential as a sustainable food source for communities facing food security challenges.
